    Marilyne Defer

Hormone Nutrition Coach & Private Chef

    Hi, I'm Marilyne!

My work began in the kitchen.

For over 11 years, I’ve worked as a chef specializing in plant-forward, functional cuisine — designing meals that support energy, digestion, lean muscle, and long-term health without restriction.

Over time, I began to notice a deeper pattern.

Many of the women I worked with were eating “well” — yet still feeling exhausted, irritable, or out of rhythm with their bodies.

In 2023, I experienced this personally.

After years of putting work and family first, I hit burnout just as I entered perimenopause.

The fatigue, sleepless nights, and mood shifts were no longer subtle. My body forced me to pause and listen.

    That turning point changed everything.

Instead of pushing harder, I chose to understand what my body truly needed.

I began focusing not on trends or extremes — but on stabilizing the foundations:

    Blood sugar rhythm
    • Adequate protein and nourishment
    • Stress and sleep regulation
    • Sustainable daily structure

Alongside my culinary background, I completed formal training with the Institute for Integrative Nutrition (IIN) and became a certified health coach — allowing me to support women beyond meals, and into the full systems approach that hormones require.

    Today, my work blends:

    Culinary expertise
    • Hormone-informed nutrition
    • Practical structure for busy professionals
    • And real-life experience navigating perimenopause

I believe health should feel steady, elegant, and realistic — not restrictive.

And I believe that when women understand their body’s signals, they can move through midlife with strength and clarity.

What's it's inside the GLOW method?

A structured, supportive space to restore steady energy — by strengthening the foundations your hormones rely on.

Over three months, we move through three intentional phases.

    Month 1 — Stabilize

We begin by understanding your full picture — your meals, routine, stress load, sleep rhythm, and cycle patterns.

    Then we gently establish:

    • Balanced, protein-forward meals
    • Blood sugar awareness
    • Consistent nourishment (no skipping)
    • Simple daily structure

The goal: fewer crashes, steadier mornings, reduced cravings.

    Not perfection — stability.

    Month 2 — Strengthen

Once energy feels more consistent, we refine.

    • Smart carbohydrate balance
    • Fiber and micronutrient support
    • Nervous system regulation
    • Sleep rhythm support
    • Ensuring you’re eating enough

    Energy becomes more predictable.
Mood and focus begin to feel calmer.

    Month 3 — Personalize

Finally, we tailor everything to your real life.

    • Cycle-aware or perimenopause adjustments
    • Strength and movement integration
    • Travel and social-life strategies
    • Sustainable routines you can maintain independently

The goal is clarity — not dependency.

You leave understanding your patterns and knowing how to adjust them.

    Ongoing Support

    Throughout the program, you receive:

    • Weekly private coaching sessions
    • Weekday accountability check-ins
    • Personalized nutrition guidance
    • Practical tools and structured resources
    • Direct support when questions arise

This is not a quick fix.

It is steady, structured support designed to calm symptoms by stabilizing the basics.

    No extremes.
    No overwhelm.

    Just thoughtful progression.
